Main reason is that at 14str/40dex the Uchigatana has 420 attack rating and the Balder Side Sword has 379. Against enemies with high physical resistance that extra ~40AR is pretty noticeable.Dark infusion is amazing for PvE, as well, save for the last few bosses. Just wanted to add that. If you use lightning or dark infusions, make sure you support them with the appropriate buff (dark blade or sunlight blade) because you get extra percentage of bonus damage when you buff lightning on lightning and dark on dark, respectively.

Uchi is one of the best weapons in the game and you can use it to make one of the few actually good boss weapons in the game. It does scale almost entirely with dex so from an efficiency stand point it may not be the best for you.
